Grilled Pork Chop Tacos
Directions:
INGREDIENTS
1 cup of teriyaki sauce
¼ cup brown sugar, packed
2 cloves of garlic, smashed
1 package of Horstmann Cattle Compnay pork chops
2 cups shredded red cabbage
½ cup red onion slivers
¼ cup apple cider vinegar
2 cups chopped watermelon
1 fresh jalapeno chile pepper, seeded and finely chopped *
*(Wear plastic or rubber gloves when working with chile peppers as they contain oils that can irritate your skin and eyes.)
DIRECTIONS:
Combine teriyaki sauce, brown sugar, and garlic in a large resealable plastic bag. Add pork chops, seal bag. Place in shallow dish, making sure that the pork is coated with marinade. Marinate in the refrigerator overnight.
Prepare and Grill for indirect heat. Cook Pork chops until they reach an internal temperature of 145 degrees. Remove from grill. Cover and let rest 5 minutes. Cut meat into bite size strips or cubes.
Toss together remaining cabbage, onion, and vinegar in a medium bowl. In another bowl, toss together watermelon, jalapeno, cilantro, and salt and pepper to taste.
Fill tortillas with pork, cabbage mixture ad watermelon relish.
